Chocolate Peanut Butter Banana Soft-Serve

Ingredients
  • 1 ripe banana, sliced and frozen
  • 1 tablespoon cocoa powder
  • 1 heaping teaspoon creamy natural peanut butter
  • 1 tablespoon almond milk (plus extra if needed)
Sundae toppings (optional):
  • 1 tablespoon peanut butter
  • ½ teaspoon coconut oil
  • 1 tablespoon chocolate chips
  • 1 tablespoon chopped peanuts
  • 1-2 tablespoons whipped coconut cream
Instructions
  1. Place frozen banana slices in a food processor, along with cocoa powder and peanut butter. Blend until banana is broken up. Pour in 1 tablespoon of almond milk and blend until smooth. If your mixture is still too thick, add an extra tablespoon of almond milk.
  2. Scoop soft-serve into a dish and enjoy plain or as a sundae.
  3. For a sundae: microwave peanut butter and coconut oil for 10 seconds and stir. Drizzle some over the soft-serve. Top with chocolate chips, chopped peanuts, and whipped topping of choice.
Notes
~For a paleo version, substitute almond butter, cashew butter, or sun butter.
~I used unsweetened almond milk, but use whatever milk you wish.
~I used SoDelicious CocoWhip for my whipped topping, but you could also make your own whipped coconut cream from this post.
