Using a hand blender, blend avocado, coconut milk, apple cider vinegar, lemon juice, and garlic in a small bowl until smooth.
Add in herbs and spices and stir until combined.
Makes about 1½ cups of dressing. Keep leftovers covered in the refrigerator.
Notes
Due to the avocado in the dressing, it may start to turn brown after a couple days, so use it up quickly! This dressing is delicious on salads, burgers, fish, chicken - you name it!
