Cut peaches in half. Sprinkle with cinnamon, ginger, and a drizzle of honey, if using.
Grill peaches on medium heat for about 3-4 minutes per side. Set aside.
In a large bowl, whisk your ice cream ingredients together.
Pour into ice cream maker and follow manufacturer's instructions. I used a Cuisnart Ice Cream Maker and it took about 10 minutes to become frozen and set.
Place a grilled peach half in each bowl. Top with Cinnamon Spice Ice Cream. Drizzle with melted coconut butter, if using. Serve immediately.
Notes
~You can substitute can of coconut cream if you want a thicker ice cream. For AIP, make sure there are no gums or thickeners added. ~I made this twice and used 1 tablespoon of honey the first time and 2 the second time. Both batches were good - just depends on your taste!
