I probably mentioned this in prior posts, but I love love LOVE Mexican food and could be happy eating it every day. So, it shouldn’t come as a surprise that I have another Mexican recipe for you!
I know I’ve showered you with guacamole, fruit salsa, and fish taco recipes in the past, but I have yet to share a basic, easy salsa recipe. Today is the day! This Simple Blender Salsa is something you can throw together in minutes and it tastes like a fresh, restaurant-style salsa – full of spices, heat, and fresh tomato, cilantro, and lime!My Simple Blender Salsa recipe was inspired by a good friend of mine, who showed me that it’s possible to make salsa using an immersion hand blender. So, when I got a hand blender of my own, I just had to try making a salsa with it. SO GOOD!
This has become my go-to salsa recipe for summer, when tomatoes and cilantro abound. It’s also versatile because if you don’t have any good fresh tomatoes on hand, you can use canned tomatoes and it’s still awesome! For this version, I used both fresh and fire-roasted canned tomatoes and I loved the result: a restaurant-style, Paleo salsa that is perfect with chips or as a compliment to Mexican meals. Before I share the recipe, I need to again highlight the Cuisinart SmartStick Immersion Blender. If my Avocado Ranch Dressing post didn’t tempt you into buying one, then maybe this Simple Blender Salsa will!
I love using the SmartStick over a traditional blender because it gives you more control over how chunky or smooth you want your salsa (or whatever you make). You can even make smoothies with it! It’s really one of my favorite kitchen appliances – and one that won’t break the bank! So, grab one on Amazon and give this Simple Blender Salsa recipe a try!
All you’ll need is a mixing bowl to pour your ingredients into. Then, use the handy dandy SmartStick and pulse the ingredients several times while moving the hand blender around gently. I found that using a deeper bowl helped to keep the salsa from splashing out of the bowl.Once the texture is to your liking (which, for me, is still a little chunky) grab your favorite chips and dig in! For my photo shoot, I went with blue corn tortilla chips from Garden of Eatin’ brand. They have a ton of delicious chip varieties and their ingredients are organic and non-GMO.Whatever your weekend plans are, make sure they include eating lots and lots of chips and Simple Blender Salsa! (Just make sure you save some to use in my next main dish Mexican recipe! Coming soon!)
- 1-10 ounce can fire-roasted diced tomatoes
- 1-4 ounce can diced green chiles
- 1 fresh tomato, chopped
- ¼ cup red onion, chopped
- ¼ cup fresh cilantro, chopped
- 1 tablespoon lime juice
- 2 teaspoons minced garlic
- 1 teaspoon cumin
- 1 teaspoon chili powder
- sea salt to taste
- Add all ingredients to a mixing bowl.
- Using immersion hand blender, pulse on low until mixture is finely diced, but not totally pureed.
- Serve with your favorite chips! Makes about 2 cups.
~I found that the fire-roasted tomatoes added a lot of flavor, so I liked using a combination of fresh and canned. You could do all fresh or all canned and it would still be good!
