Simple Blender Salsa - a restaurant-style paleo salsa that is fresh, delicious, and made in seconds with an immersion blender! | fedandfulfilled.I probably mentioned this in prior posts, but I love love LOVE Mexican food and could be happy eating it every day.  So, it shouldn’t come as a surprise that I have another Mexican recipe for you!

I know I’ve showered you with guacamole, fruit salsa, and fish taco recipes in the past, but I have yet to share a basic, easy salsa recipe.  Today is the day!  This Simple Blender Salsa is something you can throw together in minutes and it tastes like a fresh, restaurant-style salsa – full of spices, heat, and fresh tomato, cilantro, and lime!Simple Blender Salsa - this salsa is bursting with fresh flavors, Mexican spices, and tastes like restaurant-style! | fedandfulfilled.comMy Simple Blender Salsa recipe was inspired by a good friend of mine, who showed me that it’s possible to make salsa using an immersion hand blender.  So, when I got a hand blender of my own, I just had to try making a salsa with it.  SO GOOD!

This has become my go-to salsa recipe for summer, when tomatoes and cilantro abound.  It’s also versatile because if you don’t have any good fresh tomatoes on hand, you can use canned tomatoes and it’s still awesome!  For this version, I used both fresh and fire-roasted canned tomatoes and I loved the result:  a restaurant-style, Paleo salsa that is perfect with chips or as a compliment to Mexican meals.Simple Blender Salsa - a ridiculously easy salsa recipe that tastes SO much better than store-bought! I love using the SmartStick over a traditional blender because it gives you more control over how chunky or smooth you want your salsa (or whatever you make).  You can even make smoothies with it!  It’s really one of my favorite kitchen appliances – and one that won’t break the bank!Simple Blender Salsa - a spicy, fresh salsa full of tomatoes, green chilies, cilantro, and lime! Simple Blender Salsa

Ingredients
  • 1-10 ounce can fire-roasted diced tomatoes
  • 1-4 ounce can diced green chiles
  • 1 fresh tomato, chopped
  • ¼ cup red onion, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 2 teaspoons minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • sea salt to taste
Instructions
  1. Add all ingredients to a mixing bowl.
  2. Using immersion hand blender, pulse on low until mixture is finely diced, but not totally pureed.
  3. Serve with your favorite chips! Makes about 2 cups.
Notes
~If you don't have an immersion hand blender, you could try using a food processor or regular blender.
~I found that the fire-roasted tomatoes added a lot of flavor, so I liked using a combination of fresh and canned. You could do all fresh or all canned and it would still be good!
