Chocolate. Peanut Butter. Banana. Need I say more?
This divine combination has made it’s way to Fed and Fulfilled…and it definitely won’t be the last time you see these ingredients together! I have a weakness for chocolate and peanut butter. I also LOVE banana with peanut butter. I eat it for breakfast, snacks, and today, I’m using it in a simple, 4-ingredient Chocolate Peanut Butter Banana Soft-Serve! This soft-serve is the texture of a creamy ice cream and reminds me of a Wendy’s Frosty. It’s healthy enough to eat for breakfast and quick enough to whip up after a long day for a delicious dessert! In this post, I went all out and made this treat into a legit sundae, but usually, I just eat it plain without the toppings and it’s still amazing!This easy recipe serves one, so it’s perfect for nights where you want something sweet, but don’t want to worry about eating too much! In my house, there are often evenings when Mark doesn’t feel like having dessert after dinner, but I’m really craving chocolate. (Thanks, hormones!) Chocolate Peanut Butter Banana Soft-Serve to the rescue! This is my go-to dessert that I can make in minutes and it’s a LOT healthier than digging into a pint of Ben & Jerry’s “Chunky Monkey”!All you need is a food processor, a frozen banana, cocoa powder, peanut butter, and almond milk (or milk of choice). No, peanut butter isn’t paleo, but I just can’t give the stuff up and so far, haven’t felt I needed to! If you want to make a paleo version, just substitute almond butter, cashew butter, or sun butter instead!
I always have bananas on hand, since I eat them often and use them in baking. Once my bananas ripen and I can’t use them all for eating or baking, I just slice a couple and keep them in the freezer to save for soft-serve. So, if you want to make this recipe, make sure you freeze the banana in advance – like a couple hours ahead. If the banana isn’t frozen enough, you’ll end up with more of a pudding texture.Also, make sure your bananas are RIPE. This doesn’t taste good with green bananas!
Since I was making a single serving, I just added one sliced frozen banana to the food processor, followed by a tablespoon of cocoa powder, and a heaping teaspoon of peanut butter. Pulse the ingredients until the banana is broken up. Then, add a tablespoon of almond milk and blend until smooth. If your banana is super frozen, you might need to add a little extra almond milk. Scoop your creamy Chocolate Peanut Butter Banana Soft-Serve into an ice cream dish and grab a spoon. Now, a big decision: Do you stay with the basic recipe? OR, do you make it into a sundae? I was craving decadence when I made this, so I went for the sundae complete with peanut butter sauce and my favorite toppings. 🙂
To make the peanut butter sauce, I microwaved a tablespoon of peanut butter with 1/2 teaspoon of coconut oil for about 10 seconds. Then I drizzled the silky smooth peanut butter on my soft-serve. If the peanut butter sauce sits long enough on the frozen soft-serve, it will start to harden a bit – like those store-bought ice cream “magic shells.” SO GOOD!To complete my soft-serve sundae, I added some vegan chocolate chips, chopped peanuts, and whipped coconut cream. When I’m too lazy to whip up my own coconut cream, I’ll buy the SoDelicious CoCoWhip, which is what I used here.I took all of these sundae photos at lightning speed so that I could dive into this chocolate peanut butter banana goodness! RUN, don’t walk, to the kitchen to freeze a banana and treat yourself to some smooth and creamy Chocolate Peanut Butter Banana Soft-Serve tonight! And if you’re really craving dessert like I was, indulge in a sundae! You won’t regret it!
- 1 ripe banana, sliced and frozen
- 1 tablespoon cocoa powder
- 1 heaping teaspoon creamy natural peanut butter
- 1 tablespoon almond milk (plus extra if needed)
- 1 tablespoon peanut butter
- ½ teaspoon coconut oil
- 1 tablespoon chocolate chips
- 1 tablespoon chopped peanuts
- 1-2 tablespoons whipped coconut cream
- Place frozen banana slices in a food processor, along with cocoa powder and peanut butter. Blend until banana is broken up. Pour in 1 tablespoon of almond milk and blend until smooth. If your mixture is still too thick, add an extra tablespoon of almond milk.
- Scoop soft-serve into a dish and enjoy plain or as a sundae.
- For a sundae: microwave peanut butter and coconut oil for 10 seconds and stir. Drizzle some over the soft-serve. Top with chocolate chips, chopped peanuts, and whipped topping of choice.
~I used unsweetened almond milk, but use whatever milk you wish.
