Dairy-Free Avocado Ranch Dressing - an easy, creamy ranch dressing made with avocado, coconut cream, and fresh herbs! | fedandfulfilled.comAfter writing about stepping back a bit from blogging, I received so much encouragement and support!  I really, really appreciate it!  While it can be difficult to admit needing to back off a little, I know that my health will thank me.  I was also able to find a functional medicine doctor who should shed some light on my issues.  Fingers crossed!

To ease back into creating recipes for you, I put together a super easy Dairy-Free Avocado Ranch Dressing that is an awesome standalone salad dressing or a yummy sauce to slather on chicken, fish, or meat.  It’s creamy, full of fresh herbs, and is dairy-free thanks to the coconut milk.  Plus, it features one of my favorite things – avocado!  Just can’t get enough of it!Dairy-Free Avocado Ranch Dressing - a creamy, flavorful salad dressing made with avocado, coconut milk, and fresh herbs! Dairy-Free Avocado Ranch Dressing

Ingredients
  • 1 avocado
  • 1 cup full-fat coconut milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon minced garlic
  • 2 tablespoons fresh chives, minced
  • 2 tablespoons fresh dill, minced
  • ¼ teaspoon garlic powder
  • ¼ teaspoon oregano
  • ¼ teaspoon thyme
  • sea salt and pepper to taste
Instructions
  1. Using a hand blender, blend avocado, coconut milk, apple cider vinegar, lemon juice, and garlic in a small bowl until smooth.
  2. Add in herbs and spices and stir until combined.
  3. Makes about 1½ cups of dressing. Keep leftovers covered in the refrigerator.
Notes
Due to the avocado in the dressing, it may start to turn brown after a couple days, so use it up quickly!
This dressing is delicious on salads, burgers, fish, chicken - you name it!

      Haha, thank you so much, Devyn! I like it with just about any type of meat or fish and I use it in my Paleo Plantain “Potato” Salad, too! So glad you love it! 🙂
