After writing about stepping back a bit from blogging, I received so much encouragement and support! I really, really appreciate it! While it can be difficult to admit needing to back off a little, I know that my health will thank me. I was also able to find a functional medicine doctor who should shed some light on my issues. To ease back into creating recipes for you, I put together a super easy Dairy-Free Avocado Ranch Dressing that is an awesome standalone salad dressing or a yummy sauce to slather on chicken, fish, or meat. It’s creamy, full of fresh herbs, and is dairy-free thanks to the coconut milk. Plus, it features one of my favorite things – avocado! Just can’t get enough of it!So, I’ve had an on-again off-again relationship with dairy and I’m currently off dairy until I know more about my health issues. It can be difficult to find adequate substitutes for dairy-filled favorite foods, but I think my Dairy-Free Avocado Ranch Dressing is more than adequate! It’s extremely flavorful and a much healthier alternative to regular buttermilk ranch.To whip up this creamy green goodness in a matter of minutes, I enlisted the help of the Conair Cuisinart Smart Stick hand blender. I use this ALL the time and I recommend it! It’s budget-friendly and not only helps make great salad dressings, but also soups, sauces, and even smoothies. It’s so easy to use and even easier to clean! The bottom half detaches and you can just throw it right in the dishwasher.I put my Cuisinart Smart Stick to work by blending avocado, coconut cream, apple cider vinegar, and lemon juice together. After the mixture was smooth, I stirred in some spices and chopped fresh herbs by hand. I found that chives and dill were just perfect in creating the signature “ranch” flavor for this dressing.And that’s that! Probably one of the simplest recipes on my blog! I made a quick garden salad using baby spinach, carrots, tomatoes, and even more avocado, then slathered it up with avocado dressing.

- 1 avocado
- 1 cup full-fat coconut milk
- 1 tablespoon apple cider vinegar
- 1 teaspoon lemon juice
- 1 teaspoon minced garlic
- 2 tablespoons fresh chives, minced
- 2 tablespoons fresh dill, minced
- ¼ teaspoon garlic powder
- ¼ teaspoon oregano
- ¼ teaspoon thyme
- sea salt and pepper to taste
- Using a hand blender, blend avocado, coconut milk, apple cider vinegar, lemon juice, and garlic in a small bowl until smooth.
- Add in herbs and spices and stir until combined.
- Makes about 1½ cups of dressing. Keep leftovers covered in the refrigerator.
This dressing is delicious on salads, burgers, fish, chicken - you name it!
