Get excited! We’re entering into the season of picnics, barbecues, graduation parties, and cookouts as May quickly approaches. Today, I have a recipe that will fit all those occasions!
I love bringing something colorful and fresh to outdoor gatherings, and one of the recipes that is always a hit is this Easy Mango Guacamole! It’s healthy, a little sweet from the mango, tangy from the lime, and it goes well with just about any type of chips or raw veggies! This is a chunky-style guacamole, which is my absolute favorite. It’s a perfect appetizer, snack, or compliment to any protein or Mexican meal. Did I mention it only takes minutes to throw together?
I guarantee that my Easy Mango Guacamole recipe will appear again in future blog posts because of it’s versatility! One way I love eating it is with sweet plantain chips, which I just discovered at Trader Joe’s recently. SO GOOD!
Get out a serving bowl, a cutting board, some of your favorite chips, and let’s make some guac!
All you need are two avocados, a mango, a tomato, cilantro, lime, and some spices. I also added an option if you want to add a little heat, by using either a jalapeño or canned green chiles.
I started by halving my avocados and slicing them with the skin on. Then I just scooped the creamy flesh out of the skin with a spoon into my mixing bowl. If your avocados aren’t ripe enough, I came across a tip where you can actually bake them on low heat in the oven! Sounds odd, and I personally haven’t tried it, but apparently it works!
Next came the mango, which I peeled with a potato peeler, sliced off of the pit, and chopped up. Along with that, a squeeze of fresh lime juice. The lime not only adds flavor, but it prevents the avocado from turning brown right away.
And finally, chop up your tomato and cilantro, and add in the garlic powder, sea salt, and pepper.
For those who prefer a non-spicy guacamole, you can stop there. But to give it some heat, feel free to add either a diced jalapeno or canned diced green chiles. I always opt for the green chiles since it means you don’t have to risk burning your hands while cutting a hot pepper! And believe me, I speak from experience. Hot pepper hands are no fun!
Mix everything together and you’re done. Super easy! We make this guac all the time at our house and once you try it, you will, too!

- 2 ripe avocados
- 1 large mango
- 1 tomato
- ¼ cup chopped cilantro
- juice of 1 lime
- ¼ teaspoon garlic powder
- sea salt and pepper to taste
- Optional: 1 jalapeno or 2 tablespoons canned green chiles, diced
- Cut your avocados in half and remove the pit. Slice the avocados vertically and then horizontally, and then scoop out the chunks into a medium-sized bowl.
- Peel and chop your mango and add it to the avocados, along with the juice of one lime.
- Chop your tomato, and add it to the bowl.
- Add all remaining ingredients, including jalapeno or green chiles, if using.
- Stir gently, then serve with your favorite chips!
~I love serving it with plantain chips, but it's great with any chips, in a salad, or on top of a protein for a main dish.
