As you read this, Mark and I will (hopefully) be basking in the breezy, ocean-sprayed city of San Francisco! WOOHOO! This is our first time in northern California, so I’m over the moon excited to finally get to see the sights, visit Alcatraz, see the redwoods, and taste some fine Napa Valley wine! And don’t even get me started on the food! I have a list of restaurants to try that is probably longer than my packing list!
Anyway, just had to express my excitement and I promise to share photos and highlights of our trip on the blog in the near future! In the meantime, I have a fresh, colorful Strawberry Kiwi Fruit Salsa recipe for you that will have you dreaming of California, or wherever your ideal vacation is this year!We’re entering berry season here in Pittsburgh and I always get excited, since I love eating berries fresh, frozen, or baked! My favorite berries are strawberries (which technically aren’t actually berries), but let’s just pretend a little for now. I wanted to incorporate strawberries into some sort of salsa, so what better fruit to go with strawberries than fresh kiwis? This Strawberry Kiwi Fruit Salsa is so incredibly easy to make and delicious with your favorite chips! I personally chose sweet potato tortilla chips and sweet plantain chips to eat with this salsa. You’ll also be seeing this fruit salsa again in an upcoming recipe! That’s how much I loved it!All you’ll need for this colorful recipe are some strawberries, kiwis, cilantro, red onion, lime, green chilies, sea salt, and pepper.Grab a cutting board and start chopping up your strawberries and kiwis. I peeled my kiwis with a potato peeler and then added them a bowl with the strawberries.Next came the cilantro, red onion, and diced green chilies. You could also use diced jalapeno. I just have a fear of burning my hands (even with gloves), so usually take the shortcut with canned green chilies!A squeeze of lime juice, some sea salt, that’s it! Simple ingredients that pack a punch of flavor!I served my fruit salsa with sweet potato tortilla chips and it was a winning combination! The salt from the tortilla chips offset the sweetness of the fruit in the salsa so well.I also thoroughly enjoyed this with sweet plantain chips!Keep this Strawberry Kiwi Fruit Salsa recipe in mind for your next party, cookout, or Memorial Day weekend barbecue! - 1½ cups chopped strawberries
- 3 kiwis, peeled and chopped
- ¼ cup red onion, diced
- ¼ cup cilantro, chopped
- 1 tablespoon diced green chilies
- ½ lime, juiced
- sea salt to taste
- Combine all ingredients in a bowl, stir, and enjoy with your favorite chips! (I loved it with sweet potato chips and sweet plantain chips, personally!)
- Store leftovers covered in the refrigerator.
- Due to the fruit being fresh, this salsa doesn't have a long shelf life. I recommend eating it within 1-2 days.
